Cooking Instructions:
Bring 4-5 Quarts of water to a boil.
Add a little salt – It helps flavor your pasta.
Place pasta in boiling water and gently stir – 2-3 minutes.
Fresh pasta will usually float when close to cooked.

 

Cooking Times:

Fresh Cut Pasta
Thinner pastas: Capellini, Spaghetti, Tagliatelle , Pappardelle,
2-3 minutes

Thicker pastas: Rigatoni, Penne, Fettuccine, Linguine, Fusilli, and Lasagna ribbons.

3-4 minutes

How to store fresh pasta

Short-Term Storage (Up to 3 Days)

  1. Refrigerate Immediately: Place the fresh pasta in an airtight container or a resealable plastic bag.

  2. Avoid Clumping: Sprinkle the pasta lightly with flour to prevent it from sticking together.

  3. Keep Cool: Store in the refrigerator at 34–40°F (1–4°C). Use within 48 hours for optimal freshness.

 
 

Long-Term Storage (Up to 2 Months)

  1. Freeze for Later: Spread the fresh pasta in a single layer on a baking sheet and freeze until solid (about 1–2 hours).

  2. Package Properly: Once frozen, transfer the pasta to an airtight container or freezer-safe bag, removing as much air as possible.

 

Cooking From Storage

  • Refrigerated Pasta: Cook as you normally would, but check frequently as it may cook slightly faster.

  • Frozen Pasta: No need to thaw! Add directly to boiling water and cook for an additional 1–2 minutes.
